That means more weight in the wine, with the character of the traditional Tempranillo from Rioja Alavesa whilst keeping the freshness that is typical from Sierra de Toloño.
The wine is then left to ferment spontaneously with indigenous yeasts and is then aged in large oak foudres of 3000 liters for a year. They do not fine or filter the wine maintaining the philosophy of minimal intervention in the vineyard and the cellar.
